The importance of Juniper in crafting the perfect Gin and Tonic

Juniper is the backbone flavour of all great gins. It provides not only the definitive resinous and oily texture to gin, but it also drives a pine like freshness and a woody bitterness. The aroma and taste of juniper is, or at least should be, the signature note in any gin, both on the nose and on the palate. Overall the balance of juniper in gin could be described as a jack of all ingredients, as it has an influence across all spectrums of our palate.

Juniper’s oily and all round floral nature means that it lends itself amazingly to quinine, specifically high-quality quinine alongside fresh natural citrus. The hand-picked cinchona that we use in our range of tonic waters originates from the very same plantation that was used to supply the anti-malaria daily rations for the early pioneers and settlers in East Africa and East Asia in 1903.
